Dutch Baby (big pancake)

A frequent breakfast tradition this Dutch Baby (or as the grandkids call it, “big pancake”) will feed 4 when served alongside bacon and fruit.

Ingredients

  • 1 c flour
  • 1 tbsp sugar
  • 1 1/2 c whole milk
  • 4 large eggs
  • 1/4 tsp salt
  • 1/3 c butter

Instructions

  1. Place rack in the center of the oven. Preheat the oven to 425℉.
  2. Melt the butter in an oven-safe pan (cast iron or nonstick) in the warm oven. Remove pan.
  3. Beat the eggs in a large bowl. Add in the milk and stir to combine. Whisk in the flour. (This can also be done is a blender).
  4. Pour batter into the pan on top of the butter and bake for 20-25 minutes.
  5. The Dutch Baby will collapse in the middle. This is what you want so you can fill it with goodness.
  6. Dust with powdered sugar and lemon juice or fill with fruit. Enjoy immediately.
