Dutch Baby (big pancake)

A frequent breakfast tradition this Dutch Baby (or as the grandkids call it, “big pancake”) will feed 4 when served alongside bacon and fruit.
Ingredients
- 1 c flour
- 1 tbsp sugar
- 1 1/2 c whole milk
- 4 large eggs
- 1/4 tsp salt
- 1/3 c butter
Instructions
- Place rack in the center of the oven. Preheat the oven to 425℉.
- Melt the butter in an oven-safe pan (cast iron or nonstick) in the warm oven. Remove pan.
- Beat the eggs in a large bowl. Add in the milk and stir to combine. Whisk in the flour. (This can also be done is a blender).
- Pour batter into the pan on top of the butter and bake for 20-25 minutes.
- The Dutch Baby will collapse in the middle. This is what you want so you can fill it with goodness.
- Dust with powdered sugar and lemon juice or fill with fruit. Enjoy immediately.
