Garlic Lamb

Ingredients

  • 6 cloves garlic
  • 1 tbsp fresh mint, chopped
  • ½ tsp fresh rosemary, chopped
  • Salt and pepper to taste
  • 3-4 lb leg of lamb
  • 2 tbsp olive oil

Instructions

  1. In a small bowl, mix together the garlic, chopped mint, chopped rosemary, and salt and pepper to taste.
  2. Trim the meat of excess fat and make 1” deep incisions all over its surface.
  3. Insert the garlic mixture into the slits.
  4. Rub the meat evenly with the olive oil and season with salt and pepper.
  5. Preheat the oven to 450℉.
  6. Place the lamb on a roasting rack in a large pan on the bottom over rack.
  7. Roast the lamb for 30 min., then turn it over and reduce the heat to 325℉.
  8. Continue to roast until a thermometer registers 130℉, about 45 min for medium.
  9. Transfer to a cutting board, cover with foil, and let stand for 10 min.
  10. To carve, cut across the grain in thin slices.
