Ingredients
- 6 cloves garlic
- 1 tbsp fresh mint, chopped
- ½ tsp fresh rosemary, chopped
- Salt and pepper to taste
- 3-4 lb leg of lamb
- 2 tbsp olive oil
Instructions
- In a small bowl, mix together the garlic, chopped mint, chopped rosemary, and salt and pepper to taste.
- Trim the meat of excess fat and make 1” deep incisions all over its surface.
- Insert the garlic mixture into the slits.
- Rub the meat evenly with the olive oil and season with salt and pepper.
- Preheat the oven to 450℉.
- Place the lamb on a roasting rack in a large pan on the bottom over rack.
- Roast the lamb for 30 min., then turn it over and reduce the heat to 325℉.
- Continue to roast until a thermometer registers 130℉, about 45 min for medium.
- Transfer to a cutting board, cover with foil, and let stand for 10 min.
- To carve, cut across the grain in thin slices.
