Ingredients
- 2 organic boneless, skinless chicken breasts
- 1/2 c finely crushed BBQ potato chips
- 1/4 tsp paprika
- Freshly ground black pepper (to taste)
- 1/4 c heavy cream
Instructions
- Place rack in the center of the oven. Pre-heat oven to 400℉.
- Cut each chicken breast in 6-8 chunks, about 1.5 inches square.
- Combine potato chips, paprika, and pepper in a shallow bowl.
- Using one hand, dip chicken chinks into the cream.
- Drop chicken into the potato chip mixture and roll around to coat.
- Use clean hand to place chicken in a single layer on a foil-lined baking sheet.
- Bake for about 10 min, or until internal thermometer reads 165℉.
- Serve hot or cold.
