Crispy Chip Chicken

Ingredients

  • 2 organic boneless, skinless chicken breasts
  • 1/2 c finely crushed BBQ potato chips
  • 1/4 tsp paprika
  • Freshly ground black pepper (to taste)
  • 1/4 c heavy cream

Instructions

  1. Place rack in the center of the oven. Pre-heat oven to 400℉.
  2. Cut each chicken breast in 6-8 chunks, about 1.5 inches square.
  3. Combine potato chips, paprika, and pepper in a shallow bowl.
  4. Using one hand, dip chicken chinks into the cream.
  5. Drop chicken into the potato chip mixture and roll around to coat.
  6. Use clean hand to place chicken in a single layer on a foil-lined baking sheet.
  7. Bake for about 10 min, or until internal thermometer reads 165℉.
  8. Serve hot or cold.
