Swedish Pancakes
Swedish Pancakes

A Popi Christmas specialty, Christmas morning wouldn't be complete without them. (The batter can be made the night before and refrigerated overnight. Mix with a whisk and bring to room temp the next morning before cooking).
Ingredients
Batter
- 1.5 c flour
- 1 tsp salt
- 2 tsp sugar
- 3 eggs
- 3 c whole milk
- 3 tbsp unsalted butter (melted and cooled)
Instructions
To prepare the batter:
- Sift flour, sugar, and salt together in a large bowl.
- Beat eggs together in a medium bowl. Add the milk and cooled butter.
- Add the milk mixture to the flour.
- Heat a cast iron pan or Swedish Pancake pan over medium-high heat. Grease pan with butter.
- Add enough batter to make one pancake. Cook until bottom is golden brown.
- Flip the pancake and cook the second side until golden brown (about 1/3 the time as the first side).
- Enjoy with powdered sugar and apple syrup (maple syrup is also acceptable).
