Swedish Pancakes

A Popi Christmas specialty, Christmas morning wouldn't be complete without them. (The batter can be made the night before and refrigerated overnight. Mix with a whisk and bring to room temp the next morning before cooking).

Ingredients

Batter
  • 1.5 c flour
  • 1 tsp salt
  • 2 tsp sugar
  • 3 eggs
  • 3 c whole milk
  • 3 tbsp unsalted butter (melted and cooled)

Instructions

To prepare the batter:
  1. Sift flour, sugar, and salt together in a large bowl.
  2. Beat eggs together in a medium bowl. Add the milk and cooled butter.
  3. Add the milk mixture to the flour.
  4. Heat a cast iron pan or Swedish Pancake pan over medium-high heat. Grease pan with butter.
  5. Add enough batter to make one pancake. Cook until bottom is golden brown.
  6. Flip the pancake and cook the second side until golden brown (about 1/3 the time as the first side).
  7. Enjoy with powdered sugar and apple syrup (maple syrup is also acceptable).
