Ingredients
- 3 1/3 c flour, sifted
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 c vegetable oil
- 2/3 c water
- 3 c granulated sugar
- 2 c canned pumpkin pureé
- 1/2 c chopped walnuts
Instructions
- Place a rack in the center of the oven and preheat to 350℉.
- Grease and flour 3 loaf pans.
- Combine flour, baking soda, salt, cinnamon, and nutmeg in a large bowl.
- Add oil, water, and sugar and beat with a whisk to combine.
- Add pumpkin and mix.
- Fold in chopped nuts if using.
- Bake loaves for 45-50 minutes until a toothpick inserted int he center comes out clean.
- Cool in the loaf pans for 15 minutes before inverting onto a wire rack to cool completely.
