Pumpkin Bread

Ingredients

  • 3 1/3 c flour, sifted
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 c vegetable oil
  • 2/3 c water
  • 3 c granulated sugar
  • 2 c canned pumpkin pureé
  • 1/2 c chopped walnuts

Instructions

  1. Place a rack in the center of the oven and preheat to 350℉.
  2. Grease and flour 3 loaf pans.
  3. Combine flour, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  4. Add oil, water, and sugar and beat with a whisk to combine.
  5. Add pumpkin and mix.
  6. Fold in chopped nuts if using.
  7. Bake loaves for 45-50 minutes until a toothpick inserted int he center comes out clean.
  8. Cool in the loaf pans for 15 minutes before inverting onto a wire rack to cool completely.
