Ingredients
- 10 eggs
- 1/2 c flour, sifted
- 1 tsp baking powder
- 1 tsp kosher salt
- 2 c cottage cheese
- 1 lb jack cheese, grated
- 1/2 c melted butter
- 1 can diced mild chilies
Instructions
- Preheat oven to 350℉.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the eggs using an electric hand mixer or whisk.
- Add the flour to the eggs and beat to combine.
- Stir in the cottage cheese, jack cheese, butter and chilies.
- Grease a 9" x 13" casserole dish. Pour eggs into dish and bake for 35 minutes. Check for doneness by inserting a knife and ensuring it come out clean.
