Ingredients

  • 10 eggs
  • 1/2 c flour, sifted
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 2 c cottage cheese
  • 1 lb jack cheese, grated
  • 1/2 c melted butter
  • 1 can diced mild chilies

Instructions

  1. Preheat oven to 350℉.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the eggs using an electric hand mixer or whisk.
  4. Add the flour to the eggs and beat to combine.
  5. Stir in the cottage cheese, jack cheese, butter and chilies.
  6. Grease a 9" x 13" casserole dish. Pour eggs into dish and bake for 35 minutes. Check for doneness by inserting a knife and ensuring it come out clean.
