Angel's Camp Corn Bread

Ingredients

  • 1/2 lb butter, softened
  • 3/4 c granulated sugar
  • 4 eggs
  • 4 oz mild chilies, diced
  • 2 c corn kernels
  • 4 oz jack cheese, grated
  • 4 oz cheddar cheese, grated
  • 1/4 tsp salt
  • 1 c cornmeal
  • 1 c flour
  • 1 1/2 tbsp baking powder

Instructions

  1. Place a rack in the center of the oven and preheat to 375℉.
  2. Grease and flour a 9" x 12" baking dish.
  3. Cream together sugar and butter in a stand mixer fitted with a paddle attachment.
  4. Add eggs, one at a time, beating well after each addition. Scrape down sides of bowl between additions.
  5. To the bowl, add chilies, corn kernels, cheeses, salt, cornmeal, flour, and baking powder. Mix to combine.
  6. Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
