Angel's Camp Corn Bread

Ingredients
- 1/2 lb butter, softened
- 3/4 c granulated sugar
- 4 eggs
- 4 oz mild chilies, diced
- 2 c corn kernels
- 4 oz jack cheese, grated
- 4 oz cheddar cheese, grated
- 1/4 tsp salt
- 1 c cornmeal
- 1 c flour
- 1 1/2 tbsp baking powder
Instructions
- Place a rack in the center of the oven and preheat to 375℉.
- Grease and flour a 9" x 12" baking dish.
- Cream together sugar and butter in a stand mixer fitted with a paddle attachment.
- Add eggs, one at a time, beating well after each addition. Scrape down sides of bowl between additions.
- To the bowl, add chilies, corn kernels, cheeses, salt, cornmeal, flour, and baking powder. Mix to combine.
- Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
