Peanut Brittle
Rick is a peanut brittle addict, so leave a tin on his door step if you ever need a favor or to get into his good graces.
Ingredients
- 1/2 c light corn syrup
- 1 c sugar
- 1/2 c water
- 1 1/2 tsp vanilla extract
- 1 c spanish peanuts
- 1 tsp baking soda
- 1 tsp butter
Instructions
- Combine corn syrup, sugar, and water in a medium saucepan.
- Stir until the sugar is dissolved and bring to a boil.
- Add vanilla and peanuts, stirring constantly until temperature reaches 375℉ on a candy thermometer.
- Remove from the heat and stir in the baking soda and butter.
- Grease a baking sheet. Pour brittle mixture onto prepared baking sheet and spread into a rectangle.
- Let the brittle cool until firm and break apart.
