Peanut Brittle

Rick is a peanut brittle addict, so leave a tin on his door step if you ever need a favor or to get into his good graces.

Ingredients

  • 1/2 c light corn syrup
  • 1 c sugar
  • 1/2 c water
  • 1 1/2 tsp vanilla extract
  • 1 c spanish peanuts
  • 1 tsp baking soda
  • 1 tsp butter

Instructions

  1. Combine corn syrup, sugar, and water in a medium saucepan.
  2. Stir until the sugar is dissolved and bring to a boil.
  3. Add vanilla and peanuts, stirring constantly until temperature reaches 375℉ on a candy thermometer.
  4. Remove from the heat and stir in the baking soda and butter.
  5. Grease a baking sheet. Pour brittle mixture onto prepared baking sheet and spread into a rectangle.
  6. Let the brittle cool until firm and break apart.
