Ingredients

  • 1 lb fresh green beans, cut into 1/2" pieces
  • 2 medium yellow onions, thinly sliced
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley
  • 1 tbsp lemon juice

Instructions

  1. Cook green beans in boiling, salted water until tender, 4-5 minutes. Drain and pat dry on paper towels.
  2. Heat oil in a skillet over medium-high heat. Add onions and sauté until light brown. Add green beans, salt, and pepper.
  3. Transfer to a serving platter and top with parsley and lemon juice.

Crab-stuffed Mushrooms

Ingredients

  • 4 portobello mushrooms
  • 6 oz shelled, cooked lump crab meat
  • 2 c mozzarella cheese, shredded
  • 3/4 c green onions, thinly sliced
  • 2 tsp Worcestershire sauce

Instructions

  1. Rinse mushrooms and pat dry. Remove and chop stems.
  2. Mix chopped stems with crab, cheese, onions, and Worcestershire.
  3. Place mushrooms, cup side up, in a buttered 9"x13" pan. Spoon crab mixture equally into mushrooms, then press lightly to fit within caps.
  4. Bake in a a 350℉ oven until cheese melts and browns lightly, 20-25 minutes. Serve hot.
