Green Beans Lyonnaise

Ingredients
- 1 lb fresh green beans, cut into 1/2" pieces
- 2 medium yellow onions, thinly sliced
- 3 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley
- 1 tbsp lemon juice
Instructions
- Cook green beans in boiling, salted water until tender, 4-5 minutes. Drain and pat dry on paper towels.
- Heat oil in a skillet over medium-high heat. Add onions and sauté until light brown. Add green beans, salt, and pepper.
- Transfer to a serving platter and top with parsley and lemon juice.
Crab-stuffed Mushrooms

Ingredients
- 4 portobello mushrooms
- 6 oz shelled, cooked lump crab meat
- 2 c mozzarella cheese, shredded
- 3/4 c green onions, thinly sliced
- 2 tsp Worcestershire sauce
Instructions
- Rinse mushrooms and pat dry. Remove and chop stems.
- Mix chopped stems with crab, cheese, onions, and Worcestershire.
- Place mushrooms, cup side up, in a buttered 9"x13" pan. Spoon crab mixture equally into mushrooms, then press lightly to fit within caps.
- Bake in a a 350℉ oven until cheese melts and browns lightly, 20-25 minutes. Serve hot.
