French Onion Soup

Ingredients

  • 6 large yellow onions, sliced thinly into half rounds
  • 1/2 c (1 stick) butter
  • 2 cans beef broth (10.75 oz each)
  • 1 soup can water (10.75 oz)
  • 1 soup can dry white wine (10.75 oz)
  • 1 bay leaf
  • 1 tbsp flour
  • 6 slices french bread, cut 1" thick, toasted
  • 3/4 grated mixed gruyere and parmesan cheese

Instructions

  1. Melt butter in large saucepan over medium-low heat.
  2. Add onions and sauté until lightly brown, about 15-20 minutes.
  3. Add 1 tbsp flour and stir for 1 minute.
  4. Add beef broth, wine, water, and bay leaf. Bring to a boil, then simmer for 10 minutes.
  5. Season with salt and pepper.
  6. Spoon into 6 oven-proof soup bowls.
  7. Top each bowl with a piece of toast and cheese.
  8. Broil in the oven until cheese is melted and golden brown.
