Ham Newburg Casserole

Ingredients

  • 1 lb spaghetti
  • 2 x 10.75 oz cans Campbells Cream of Mushroom Soup
  • 1/2 c sherry
  • 1 large yellow onion, chopped
  • 1/4 c green pepper, chopped
  • 1/2 lb grated cheddar cheese
  • 4 c cooked ham, cut into 1" squares
  • 6 oz button or cremini mushrooms, sliced
  • 1/2 c pimientos (optional)
  • 2 c panko
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti in a pot of boiling water until al dente. Drain.
  2. Place a rack in the center of the oven and preheat to 350℉.
  3. Chop and lightly sauté onion and bell pepper in olive oil, for 3-5 minutes.
  4. In a large bowl, combine spaghetti, soup, sherry, onion, and green bell pepper.
  5. Add cheese, ham, mushrooms, and pimientos (if using).
  6. Season with salt and pepper.
  7. Pour into a 14" x 9" casserole dish.
  8. Sprinkle panko on top to cover noodles. This may require more or less than 2 cups, don't make it too thick, just a medium to light covering. Drizzle the top with olive oil.
  9. Cook for 30 minutes. Serve warm.
