Ham Newburg Casserole

Ingredients
- 1 lb spaghetti
- 2 x 10.75 oz cans Campbells Cream of Mushroom Soup
- 1/2 c sherry
- 1 large yellow onion, chopped
- 1/4 c green pepper, chopped
- 1/2 lb grated cheddar cheese
- 4 c cooked ham, cut into 1" squares
- 6 oz button or cremini mushrooms, sliced
- 1/2 c pimientos (optional)
- 2 c panko
- Salt and pepper to taste
Instructions
- Cook spaghetti in a pot of boiling water until al dente. Drain.
- Place a rack in the center of the oven and preheat to 350℉.
- Chop and lightly sauté onion and bell pepper in olive oil, for 3-5 minutes.
- In a large bowl, combine spaghetti, soup, sherry, onion, and green bell pepper.
- Add cheese, ham, mushrooms, and pimientos (if using).
- Season with salt and pepper.
- Pour into a 14" x 9" casserole dish.
- Sprinkle panko on top to cover noodles. This may require more or less than 2 cups, don't make it too thick, just a medium to light covering. Drizzle the top with olive oil.
- Cook for 30 minutes. Serve warm.
