Double Fettuccine with Peas and Prosciutto

Ingredients

  • 1 c heavy cream
  • 2 c frozen peas, thawed
  • 5 oz prosciutto, cooked ham, or bacon, chopped (about 1 c)
  • 1/2 c grated parmesan cheese + more for finishing
  • Salt and pepper to taste
  • 6 oz fettuccine
  • 6 oz spinach fettuccine

Instructions

  1. Heat the heavy cream in a large saucepan, being careful not to boil.
  2. Stir in the peas, prosciutto, 1/2 parmesan, salt and freshly ground pepper.
  3. Cook, stirring occasionally, for 5 minutes, or until mixture is heated through.
  4. Meanwhile, boil a large pot of water and and cook fettuccine until al dente.
  5. Transfer fettuccine to the cream mixture and toss gently to combine. Add more salt and pepper as desired.
  6. Transfer to a serving platter and grate additional parmesan over the top. Serve immediately.
