Double Fettuccine with Peas and Prosciutto
Ingredients
- 1 c heavy cream
- 2 c frozen peas, thawed
- 5 oz prosciutto, cooked ham, or bacon, chopped (about 1 c)
- 1/2 c grated parmesan cheese + more for finishing
- Salt and pepper to taste
- 6 oz fettuccine
- 6 oz spinach fettuccine
Instructions
- Heat the heavy cream in a large saucepan, being careful not to boil.
- Stir in the peas, prosciutto, 1/2 parmesan, salt and freshly ground pepper.
- Cook, stirring occasionally, for 5 minutes, or until mixture is heated through.
- Meanwhile, boil a large pot of water and and cook fettuccine until al dente.
- Transfer fettuccine to the cream mixture and toss gently to combine. Add more salt and pepper as desired.
- Transfer to a serving platter and grate additional parmesan over the top. Serve immediately.
