A Christmas classic and a favorite amongst the McInroy grandkids.
Ingredients
Brownies
- 1/3 c shortening
- 1 oz unsweetened chocolate
- 2 c sugar
- 2 eggs
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 flour
- 1/2 c walnuts, chopped (optional)
Topping
- 1/4 c unsalted butter, room temperature
- 2 c powdered sugar
- 2 tbsp milk
- 1 tsp vanilla
Instructions
Brownies
- Place a rack in the center of the oven and preheat to 350℉.
- Grease a 9" square pan. Line bottom with parchment paper so some hangs over the side. This will make it easier to get the brownies out of the pan.
- Melt the shortening and chocolate in a non-reactive bowl over simmering water, careful not to let the bowl touch the water. Once melted and combined, set aside to cool slightly.
- Beat in the sugar and eggs, whisking to combine.
- Sift together the flour, salt, baking powder, and walnuts (if using).
- Pour into the pan and bake for 30-35 min, or until a toothpick inserted into the batter comes out cleanly.
- Cool in pan.
Topping
- While the brownies are cooling, make the topping.
- Brown the butter in a small sauté pan over medium heat. Transfer browned butter to a medium bowl.
- Mix powdered sugar, milk, and vanilla into butter.
- Once brownies are cool, spread the topping over.
- Remove from pan and cut into as many squares as you like!
- For the ultimate topping: Melt together 1/2 oz unsweetened chocolate and 1 tbsp butter. When slightly cooled, spread a thin coating on top of the frosted brownies. Refrigerate to harden, then cut into 1" to 2" pieces.
