Ingredients

  • 1 egg
  • 1 c bread crumbs
  • 1/2 small yellow onion
  • 3 tbsp green bell pepper, minced
  • 2 tbsp celery, minced
  • 1 lb fresh crab meat
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 tsp Dijon mustard
  • 1 tbsp chicken stock
  • Cracker crumbs

Instructions

  1. In a large bowl, mix all ingredients, except cracker crumbs, until the mixture is moist and holds together.
  2. Sprinkle cracker crumbs on a piece of wax paper.
  3. Form crab mixture into cakes and coat both sides with crumb mixture.
  4. Place on a baking sheet while you coat all cakes.
  5. Heat a fry pan to medium-high heat. Add 2 tbsp olive oil. Cook crab cakes until golden brown on each side, about 4 minutes per side.
  6. Drain on paper towels. Serve with tartar sauce.
