Crab Cakes

Ingredients
- 1 egg
- 1 c bread crumbs
- 1/2 small yellow onion
- 3 tbsp green bell pepper, minced
- 2 tbsp celery, minced
- 1 lb fresh crab meat
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1/2 tsp Dijon mustard
- 1 tbsp chicken stock
- Cracker crumbs
Instructions
- In a large bowl, mix all ingredients, except cracker crumbs, until the mixture is moist and holds together.
- Sprinkle cracker crumbs on a piece of wax paper.
- Form crab mixture into cakes and coat both sides with crumb mixture.
- Place on a baking sheet while you coat all cakes.
- Heat a fry pan to medium-high heat. Add 2 tbsp olive oil. Cook crab cakes until golden brown on each side, about 4 minutes per side.
- Drain on paper towels. Serve with tartar sauce.
