Ingredients

  • 4 eggs, room temperature
  • 2 3/4 c unbleached all-purpose flour
  • 2 c half and half
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp cardamom
  • 2 1/4 tsp (1 pkg) yeast

Instructions

  1. Heat oven to 150℉. Place an oven-safe bowl on rack to warm.
  2. Heat half and half in a small saucepan to lukewarm.
  3. Turn the oven off and remove the bowl. In the bowl, mix the yeast, sugar, salt, and flour.
  4. Add the milk and beat with an electric hand mixer.
  5. Add the eggs, one at a time, beating well after each addition.
  6. Cover with a tea towel and return the bowl to the oven.
  7. Let dough rise in the oven 1-1.5 hours until doubled in size.
  8. Heat an aebleskiver pan over medium heat until hot. Brush butter or shortening in each hole to grease.
  9. Fill each cup with about 2 tablespoons of batter, immediately adding filling (raisins, apple compote, etc. if using). Use a wooden skewer, chopstick, knitting needle, or fork to flip them over half way, letting the batter slide around to fill in the bottom of the cup.
  10. Continue cooking, turning the aebleskiver again to let the batter fill in the remainder of the sphere and continuing to turn until golden brown all the way around and cooked through.
  11. Transfer to a serving plate and dust with powdered sugar. Eat with jam or syrup if desired.
