A CJ favorite and the only snickerdoodles he really likes.

Ingredients

  • 1 c shortening
  • 1 1/2 c + 2 tbsp granulated sugar
  • 2 eggs
  • 2 3/4 c unbleached all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon

Instructions

  1. In a medium bowl, sift together flour, cream or tartar, baking soda, and salt.
  2. In a stand mixer with a paddle attachment, beat together shortening, 1 1/2 c sugar and eggs. Scrape down the bowl.
  3. Add flour mixture to batter and beat until just combined.
  4. Chill dough for 1 hour in the fridge.
  5. Place a rack in the center of the oven and preheat to 400℉. Line a baking sheet with parchment paper or silpat.
  6. Mix together 2 tbsp sugar and cinnamon in a small bowl.
  7. Roll dough into balls the size of walnuts. Rolle each dough ball in the cinnamon-sugar mixture.
  8. Place each ball about 2" apart on a baking sheet. Bake for 8-10 minutes.
  9. Remove to a cooling rack.
