A CJ favorite and the only snickerdoodles he really likes.
Ingredients
- 1 c shortening
- 1 1/2 c + 2 tbsp granulated sugar
- 2 eggs
- 2 3/4 c unbleached all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
Instructions
- In a medium bowl, sift together flour, cream or tartar, baking soda, and salt.
- In a stand mixer with a paddle attachment, beat together shortening, 1 1/2 c sugar and eggs. Scrape down the bowl.
- Add flour mixture to batter and beat until just combined.
- Chill dough for 1 hour in the fridge.
- Place a rack in the center of the oven and preheat to 400℉. Line a baking sheet with parchment paper or silpat.
- Mix together 2 tbsp sugar and cinnamon in a small bowl.
- Roll dough into balls the size of walnuts. Rolle each dough ball in the cinnamon-sugar mixture.
- Place each ball about 2" apart on a baking sheet. Bake for 8-10 minutes.
- Remove to a cooling rack.
