Hot Milk Sponge

Ingredients

  • 4 eggs
  • 2 c white granulated sugar
  • 2 c cake flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp vanilla extract
  • 1 c milk
  • 2 tbsp unsalted butter

Instructions

  1. Place a rack in the center of the oven and preheat to 350℉.
  2. In a medium bowl, sift together the flour, baking powder, and salt.
  3. In a large bowl, beat the eggs with a whisk or electric hand mixer.
  4. Add the sugar and vanilla and beat until combined.
  5. Add the flour mixture and mix on low until just incorporated.
  6. Heat the milk with the butter in a saucepan until almost boiling. Slowly drizzle the milk mixture into the batter, beating as you pour to avoid scrambling the eggs.
  7. Pour the batter into an ungreased angel food cake pan. (It is very important not to grease the pan or the cake won't rise).
  8. Bake for 40-45 minutes.
  9. Cool upside down.
