Hot Milk Sponge

Ingredients
- 4 eggs
- 2 c white granulated sugar
- 2 c cake flour
- 2 tsp baking powder
- 1 tsp salt
- 2 tsp vanilla extract
- 1 c milk
- 2 tbsp unsalted butter
Instructions
- Place a rack in the center of the oven and preheat to 350℉.
- In a medium bowl, sift together the flour, baking powder, and salt.
- In a large bowl, beat the eggs with a whisk or electric hand mixer.
- Add the sugar and vanilla and beat until combined.
- Add the flour mixture and mix on low until just incorporated.
- Heat the milk with the butter in a saucepan until almost boiling. Slowly drizzle the milk mixture into the batter, beating as you pour to avoid scrambling the eggs.
- Pour the batter into an ungreased angel food cake pan. (It is very important not to grease the pan or the cake won't rise).
- Bake for 40-45 minutes.
- Cool upside down.
