Ingredients
- 6 c blackberries
- 1 1/2 c sugar
- 1 1 /2 c flour
- 1 c sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 c vegetable oil
- 1 egg
- 1/2 c milk
- 1 tsp vanilla extract
Instructions
- Place a rack in the center of the oven and preheat to 350℉.
- Combine blackberries and sugar in a large bowl. Top to coat berries. Set aside while you prep the remaining ingredients.
- Sift together the flour, sugar, baking powder, and salt in a medium bowl.
- Mix together the egg, milk, oil, and vanilla using a hand mixer in a large bowl.
- Add the flour mixture to the batter and beat slowly until just combined.
- Pour the blackberries into a 9"x12" casserole dish so they cover the bottom.
- Pout the batter on top of the berries.
- Bake for 35 minutes until golden brown and toothpick inserted comes out cleanly.
