Blackberry Cake

Ingredients

  • 6 c blackberries
  • 1 1/2 c sugar
  • 1 1 /2 c flour
  • 1 c sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 c vegetable oil
  • 1 egg
  • 1/2 c milk
  • 1 tsp vanilla extract

Instructions

  1. Place a rack in the center of the oven and preheat to 350℉.
  2. Combine blackberries and sugar in a large bowl. Top to coat berries. Set aside while you prep the remaining ingredients.
  3. Sift together the flour, sugar, baking powder, and salt in a medium bowl.
  4. Mix together the egg, milk, oil, and vanilla using a hand mixer in a large bowl.
  5. Add the flour mixture to the batter and beat slowly until just combined.
  6. Pour the blackberries into a 9"x12" casserole dish so they cover the bottom.
  7. Pout the batter on top of the berries.
  8. Bake for 35 minutes until golden brown and toothpick inserted comes out cleanly.
